The Experience
Meet Chiang Mai Beyond the Walls
Begin beside Chiang Mai’s historic moat and walls before leaving the Old City behind. From here, follow the food into the neighbourhoods where Chiang Mai locals live, work, eat and unwind. Along the way, discover how the city’s food has been shaped by generations of families, migration, trade and cultural exchange.
A Curry with Burmese Roots
Taste a rich pork and ginger curry with Burmese roots that travelled into Northern Thailand and became part of Lanna cuisine. It’s a delicious introduction to Chiang Mai’s food heritage – and to the idea that the dishes we think of as “local” often have stories that stretch far beyond the city itself.
A 50-Year Street Food Legacy
Head into the neighbourhoods for smoky, savoury pork skewers from a roadside stall that has been part of local life for more than 50 years. This is everyday Chiang Mai food: simple, unfussy and made for generations of local customers. If you’re feeling adventurous, there’s also the option to try a taste of local moonshine, just as locals might alongside their street food. Here, legacy isn’t about fine dining – it’s about a family, a recipe and a tradition that simply keeps going.
Food That Travels with People
Taste a Northern Thai noodle dish unlike anything you’re likely to have tried before. This family-run food stall is hugely popular with locals, drawing generations of Chiang Mai residents back for the same flavours. The story here is bigger than what’s in the bowl – recipes, ingredients and cooking traditions travelled across borders with traders, workers and migrants, eventually becoming part of Chiang Mai’s own culinary identity. It’s a chance to taste how food evolves, adapts and becomes local over generations.
The Flavours of Chiang Mai’s Chinese Heritage
Walk through Chang Moi, a historic commercial neighbourhood shaped by Chinese migration and trade along the Ping River. Here, we bring together dumplings, crispy tofu, pork, spring rolls, herbal tea and other local favourites from small family-run businesses. Together, they tell a bigger story of how food traditions travel, adapt and become part of a new place – creating a distinctly Chiang Mai food culture over generations.
A Living Market After Dark
Visit Chiang Mai’s bustling working market, a place locals have relied on for generations. By now, the sun has gone down and the market is alive with people shopping, eating and going about their evening. This isn’t a market created for tourists, it’s a living part of Chiang Mai, where generations of local food traditions continue alongside the changing city. Wander through the stalls, follow the aromas and discover the everyday snacks and flavours that bring locals here night after night.
Follow the River & Raise a Glass to Chiang Mai
Cross the Ping River and take in the city from the water that helped shape Chiang Mai’s history. For generations, the river carried people, goods and ideas into the city, helping create the markets and neighbourhoods you’ve explored tonight. Then settle into a relaxed local riverside bar for a final drink – no more food, just a cold beer or soft drink, the river and time to unwind. It’s the perfect way to finish an evening spent eating your way through Chiang Mai’s living food heritage.
A Taste of the Tour:
Leave the Old City behind and follow the food into the neighbourhoods, markets, family kitchens and street stalls where Chiang Mai locals really eat.
This is an evening of food, stories and discovery – exploring the legacy of generations, the movement of people and the migration of food traditions that have shaped Chiang Mai.
From Northern Thai recipes passed down through families to Chinese-influenced dishes brought by generations of migrants, we’ll follow the food through neighbourhoods that tell a much bigger story about the city.
Along the way, we’ll eat at family-run restaurants, roadside stalls and local markets, travel between neighbourhoods in a Chiang Mai songthaew (red trucks) and discover the everyday places where people work, shop, meet, eat and unwind.
This isn’t Chiang Mai’s postcard version.
It’s Chiang Mai from the inside out.
